Gluten Free Diet
Gluten is found in grains like wheat, barley, rye, and also a grain called triticale which is a cross between wheat and rye. It is a sticky substance that binds ingredients together. and is found in most foods like bread, pasta, cereals, and crackers. It can even be found in other less suspecting foods like salad dressing and processed meats. Some people are sensitive to gluten and develop a disease called, "Celiac Disease", which can cause inflammation in the small intestine. Avoiding gluten can help these people control their symptoms. People who are gluten intolerant often suffer with digestive problems , but they can also suffer with Headaches, mood swings, and irritability. Gluten can cause inflammation inside the body, and has also been linked to Type 2 Diabetes, heart disease and obesity. Symptoms like depression and anxiety which are not typically linked to gluten intolerance can also be signs of gluten sensitivity.
Making the change to a gluten free diet can be extremely difficult if you don't know which foods have gluten in them. There are a lot of gluten free choices today that were not available even a few years ago, making it much easier to make the necessary changes in your diet. Beans, seeds and nuts are naturally gluten free, as well as eggs, fresh meats, dairy products and fruits and vegetables. Just make sure they aren't processed with additives that contain gluten. There are also many grains that are gluten free and can make great replacements like corn, buckwheat, amaranth, flax, millet, quinoa, rice and soy.
